Very intense purplish red color. Aromas of red fruits such as blackberries, raspberries and plums combined with soft notes of tobacco. Full bodied on the palate. Its tannins in balance with its acidity, provide structure and volume in the mouth. Fruit and floral flavors persist, with a touch of cocoa. Ideal combination with spicy cheeses, roasted meats or pasta with strong and / or spicy sauces.
Cold pre-fermentation maceration at 6-8 °C for 7 days . Addition of selected yeasts. Alcoholic fermentation at controlled temperature between 24-26 °C for 12 days. Daily pump-overs with delestage at the beginning of the fermentation. Post fermentation maceration for 12 days.
