Intense purplish red color. It presents violets and plum jam complementing itself aromas of vanilla and tobacco from the aging in oak barrels. Good volume on palate, fatty, fleshy, with firm tannins that ensure a long finish. Notes of black fruits, blackberries, spices and minty aromas. Ideal combination with red meats and various spicy dishes.
Cold pre-fermentation maceration at 6-8 °C for 7 days . Addition of selected yeasts. Alcoholic fermentation at controlled temperature between 24-26 °C for 12 days. Daily pump-overs with delestage at the beginning of the fermentation. Post fermentation maceration for 12 days.
